Irish Soda Bread

Ingredients

3 1/2 cup all-purpose flour
1 teaspoon baking soda
2 1/4 teaspoon table salt
1 1/2 cup buttermilk  (For each cup of buttermilk, you can use 1 tablespoon of white vinegar or lemon juice plus enough milk to measure 1 cup. Stir, then let stand for 5 minutes.)

Preheat oven to 425 degrees F 

In a large bowl whisk together your flour, baking soda and salt. Add in your buttermilk and stir until it just comes together.

Turn out onto lightly floured surface and knead until it forms a smooth ball.  Dust outside with flour and place on an un-greased baking sheet.  Use a sharp knife to slash a 1 inch deep cross on top of the loaf.

Bake in oven for 35 minutes or until golden brown.

PRETZELS

1 ½ cups warm water
1 tablespoon yeast
1 teaspoon salt
1 tablespoon sugar
4 cups flour
1 egg, beaten
coarse Kosher salt

Measure warm water into bowl.  Sprinkle in yeast and stir.

Add salt, sugar and flour.

Mix and knead dough until uniform in consistency.

Break dough into small balls.  Kids shape into numbers, letters, animals etc.

Put on cookie sheets that are lined with aluminum foil.

Brush pretzels with beaten egg.  Sprinkle with coarse salt.

Bake at 400 degrees for 12-15 minutes.

SUE’S SUGAR COOKIES

1 cup butter
1 cup sugar
1 egg
2 tablespoon cream or milk
3 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla

Cream butter and gradually add the sugar.  Blend in cream, baking soda, baking powder and vanilla.  Gradually add in the flour until it is all mixed.  Chill.  Roll out and cut out cookie shapes.

Bake at 400 degrees for 5-6 minutes.

Use can use a food mixer to combine all the ingredients.
